‘Día del Niño‘ is observed in Mexico and many other Latin American countries on April 30th. So, HERDEZ® Brand wants to celebrate the joy of childhood through authentic Mexican food that honors our culture, traditions and the children in all of us this year. They even have a fun contest running on HERDEZ Facebook page! Keep reading to learn more about said contest, and to find out how I celebrate the child within through food inspired by my mom’s love for cooking and fiestas.
Personally, I’m all about staying in touch with the child in all of us. It keeps us young, happy, energetic and aspiring to walk a path more attuned with our true selves. I always tell my friends that if at some point in life they feel like something is missing, or if they feel stuck, to always tap into their child self. We have the answers to so many things in life so early on. However, we sometimes forget as we get caught up growing up and in the daily grind. So, when HERDEZ® reached out asking to share a recipe that celebrates my childhood with all of you, I immediately said yes. It is a great way to tap into the child in me, and pay homage to my mom through a fun recipe she still makes for us. (I have a brother and sister!)
My mom always dreams of hosting a buffet-style meal with all of her children and grandkids. (Someday mom!) However, even if her dream family dinner hasn’t happened yet, she has been treating us to make-your-own-plate style of meals for a very long time now. Sometimes it’s just a couple of bowls with different ingredients and fillings in the kitchen, and for special occasions, it’s a more elaborate table. What can I say? My passion for entertaining is definitely something that I get from my mom… and also my dad! (Oh, those two Hauties!)
Anyway, one of my mom’s favorite is to create what I will call a ‘Burrito Bar’! All you have to do is cook ground beef, in my case, I made it vegetarian-friendly by using soy crumbles! I seasoned these with Adobo, because the Puerto Rican in me seasons everything with Adobo. Place tortillas and bowls with the ground beef/soy crumbles and fillings like cheese, lettuce, avocados, sour cream and salsa (Try HERDEZ® Salsa Casera or Salsa Verde!) for everyone to make their own Burrito. It’s super easy, super fun and if you have little ones of your own, or just visiting, it is a great way for them to enjoy a more hands on dinner time! I filled my Burrito with everything, folded it and then covered it in the HERDEZ® Salsa Casera. The taste and simplicity of this dish made me smile! (Thanks for the inspiration, mom!)
